
Before leaving on our trip to Mexico, I asked on Facebook what kind of posts you guys would like to see about it. A lot of you wanted to see food!
Being married to a Mexican, I usually travel as a local rather than a tourist, which gives me a unique perspective. I find that most of the basic food items are similar to what I would make at home, the main differences are the spices, and the corn flour (as opposed to wheat).
The picture above is coconut with Valentina. Although having a coconut on the beach is not something unusual, to me, the sauce is. Before meeting my husband, I never would have thought of putting spicy sauce on coconut. It's actually pretty good.
In the first picture below is something pretty typical. Re-fried beans with a corn tortilla and rice. The brown part is chicken with mole rojo. Looks gross right? But what if I told you it's chocolate based? Yup, it's a mild spicy pepper and chocolate sauce. It's as delicious as it sounds.
The following picture is a container of spicy chocolate chunks. You use it to make Mexican hot chocolate. My mother-in-law also uses it to make the mole rojo amongst other things.
Last but not least, the end picture is tamales. Tama-what? This is a delicious breakfast made with a corn-based starchy dough that is steamed in a corn leaf. They're filled with different things from fruit to meat. I'm pretty sure anything goes, even cheese.
There's a lot of other things, but those are the ones I was able to take pictures of. If any of you are interested, I could ask my husband to help me write up some Mexican recipes so you can try them. What do you think?

ReplyDeleteTamales are definitely the bomb!! Lol. Aww, thanks Chels! My husband doesn't mind if I put pictures of him on the internet, but we're undecided about the kids. So I just try to write about things that don't pertain to them in general, which is why you don't see my husband a lot around these parts (or my kids). It's kind of hard though, since they occupy 99% of my time and almost all of my pictures have my family in them. Lol. My last outfit post, I think you can see my oldest son. That was a special day. :P Who knows, maybe they'll be in more pictures in the future.

ReplyDeleteMexico looks so beautiful! It's a place I'd love to visit one day. Like you, I was nervous about traveling with my little one but it's actually so fine isn't it? It's great that you and your mother-in-law were able to cater for your sons egg allergy yourselves.
ReplyDeleteI have never been to Mexico but I know that any beach right now is what I need. We are laving to go on vacation next week to the gulf and we can't wait. This will be the first time we travel in the car with my daughter so I hope it goes well.

I'm with you, I like going to the beach in the early part of the morning and stopping by the pool a little later in the day. How nice for your in-laws to give you a nice time out together while they enjoyed their Grands.
ReplyDeleteMexico is such a lovely place to vacation. I've been a few times with the family, and we loved it. Where else can you enjoy the beach, horseback riding, ancient ruins, and fine dining all in the same trip?
ReplyDeleteWhat gorgeous photos! That is such a wonderful opportunity to combine visiting family and vacationing in a beautiful location! I have always wanted to visit Mexico, not sure I would do a horseback ride now though. That is disturbing to hear how they treat the poor horses!

ReplyDeleteHi Shirley! Yea, the pool was much too cold in the mornings. I'm so glad I get along well with my in-laws. Actually, I get along with them better than with my own family. Odd for a girl, but true for me. They're just so nice.

ReplyDeleteHi Christina! I know right? Poor horses. I mean, if I were in those poor people's position I might do the same, I don't know. They have barely enough to feed their own families. It's sad. At least I feel comforted that I helped a little bit to feed someone in need (even though the horse might have been starved). I hope we get to do trips like these again in the future, with my in-laws, they're such awesome people and wonderful grand-parents.

ReplyDeleteThat's so sweet thank you! He's just 2 right now. I guess I'm wondering how it will affect his social life. You know, when all your friends go out to parties and restaurants. What do you do? I'm worried it might make outings hard for him, and I want to be able to help him. Do you have any advice?
ReplyDeleteIt's a little tricky but most restaurants are so used to dealing with food allergies it's no big deal. He'll be able to tell them he has an allergy and not worry. Lot's of kids outgrow it as they get older too :)

ReplyDeleteYes I rarely have trouble. Especially if I inform them it's because of an allergy. They are VERY careful when it comes to allergies. Just stick clear of things like burgers (or ask if they use an egg binder). My biggest issue is with turkey burgers (I'm allergic to red meat too... fun times lol). I never let it stop us from going out and enjoying ourselves. As your son gets older he'll learn to be careful but hopefully he'll outgrow it!

ReplyDeleteThanks Michelle! I was in a lot more of the pictures but I got an allergic reaction to the sunscreen and my face was so unbelievably swollen it was embarrassing. Lol. I had to have a shot of cortisone for the swelling to go down. Then I took better pictures. :) Where do you travel to with your family?
ReplyDeleteWe did and the hotel was amazing. Although next time we're going back to Playa del Carmen because the beaches are so much nicer than Acapulco. I didn't feel that confident in my swimsuit and I'm not completely satisfied with my body but I figured if I don't pretend now, I'll regret it later (which I do now about my early 20s body... -sighs- girls right?). So on with the swimsuit and I'm glad I did it! You should too!

London, Paris, Switzerland, and then back packed around Italy. It was incredible!
ReplyDeleteThat's is so true! And Playa del Carmen huh? Hum I'll have to remember that. We often talk about taking a trip to Mexico. I've only been to Baja Mexico as a kid. I remember my money going really far and thinking that it was the coolest thing in the world lol!
ReplyDeleteYea, Playa del Carmen. It's close to Cancun but less Americanized. The beaches are so much nicer on the East Coast of Mexico. I've never been to Baja. Did you like it?

ReplyDeleteWe took a cruise from England to Italy and then used the train the rest of the time. The high speed train from Geneva to Paris was the kids' favorite.
ReplyDeleteYea the train is pretty cool. I've taken it before. Cruises are a fun way to travel, although I've never taken one. It would be fun to try!
